Food the Sick: Wholesome Chicken Soup Recipe

ioh this chicken soup is so wholesome and its good for the sick…and my daniel is still having the flu…i know i know its been quite sometime now…i too wonder why he’s still sick.took him to the doctor and got another round of antibiotic…sigh~ all these medicine must not be good for him in long term…anyway he’s alot more thinner now due to lack of appertite this is the only foor he’d take with his rice or mee or pasta…why? beats me…but all i know is that he’s more enercetic after eating it…it must be the soup right? ;) at least i’d like to believe that…

for this recipe i recond you to use only organic chicken…antibiotic free chicken for therapeutic purpose. :D

Chicken Soup

1 stick carrot cut into bite size

2inch of celery finely cut

2 potatoes diced (bite size)

2 tomatoes cut into large wedges (the redder the soup the better so more tomatoes are allowed)

3/4 chicken cut into small piece (you can add more chicken if you like)

1 clove garlic sliced thinly

1 inch ginger sliced thinly

1tbs oil

5ooml water

salt & sugar to taste

black pepper *optional

methods:

  1. heat the oil in medium heat and saute the garlic and ginger until fregrant.
  2. add in water, chickenand salt to taste. let it simmer.
  3. then add in all the other ingredients, occasionally stir the soup
  4. let it reduce the soup a little then its ready to serve…

its like making chicken stock except that we don’t use bay leaf here. ;)

Gulai Udang masak ala Padang

Gulai Udang ala Padang

300g udang size M (but its up to your liking)

1pc tumeric leave

2pc of daun limau purut

3pcs/strands of kacang panjang /long beans cut into an inch long

some corsely cut cucumber *optional

250ml thick coconut milk

100ml water

4tbs frying oil

salt and sugar to taste (i don’t you ajinamoto/MSG…not a big fan)

1tsp coriander powder / serbuk ketumbar

blended ingredients:

1 large onion

2clove garlic

1inch of ginger

1inch of tumeric

5pcs of green chilli padi /bird eye chilli *more if you want it HOT

2inch of lengkuas (i dunno what this called in english…but i looked like ginger)

methods:

  1. heat oil and add in the blended ingredients and coriander powder.
  2. fry until aromatic (sampai naik bau lar)
  3. then add in the coconut milk and water, stir gently until simmer
  4. add in the tumeric leaf, daun limau purut, the veges and the prawns
  5. cook for a good 5 mins in medium heat or until prawn is cooked

p/s: don’t cook for too long or the prawn will be stiff.

p/ss: this same recipe , you can replace the prawns with chicken.

spring cleaning the kitchen

today i woke up feeling energetic so i’ve decided to spring clean my kitchen…my kitchen was in a mess for a long long time…i have lots of baking ingredients stored up some been used, some still stored and some had became stale *ackward smile* i’ve instruct my maid to do some cleaning, in the cupboards, fridge, freezer etc…whilst i’ve to vet which items keep-able and which is the ‘unworthy’ hehe~…

this is after cleaning…does it still look messy? may be but it’s actually organized..i can look for my baking stuff and spice easily now!

and this is my freezer look like before cleaning…i dunno what’s in there…i bet there’s lots of rubbish in there…you can see the kek lapis box (gorgeous looking cake tapi tak sedap) my in law gave to us the bought in sarawak…err no offence intended but that cake really lack of taste! and i also see several of intant frozen stuff there, frozen chicken stock (i make my own stocks coz i’m not a big fan of store bought stocks not to mention of MSGs), buah keras, ice cream, hotdogs, burger patties etc….what a messand we’ll have to dive in and see what’s still good..

and this is my fridge which is equally messy coz it is really small fridge. My sister in law said its a bachelor’s fridge not for family …and i see what she means…heheeh wayyyyy too small right? *sigh~* we do intend to buy a larger fridge soon its just that we don’t know when or how ’soon’ it will be….so for now clean clean clean…

oh my ever so messy kitchen… don’t be fooled by this picture…look at the counter top, its cramp with stuff…

while doing that i’ve to cook for lunch. i usually don’t cook during lunch time, but hubby’s home and in 2 hours time he’ve to go for friday prayers. so i’ was multi-tasking all morning.

our lunch menu…:

  1. Gulai udang ala Padang
  2. fried chicken marinated with fresh tumeric, ginger , a splash of lime juice and salt to taste.
  3. chicken soup<–my son loves this very much and its wholesome too!
  4. Telur Dadar / Omlette with meat loaf shreds
  5. Home made Pandan syrup for a refreshing drink

yup i’ve managed to do all that and spring clean at the same time…i know i know it seems impossible but it is possible and i think i’m getting good at it too…it easy when you’re basically a full time housewife and only a partime sales person. i get lots of practise! if i’m still not good at these kind of things i don’t know what i’m good at…*sigh*
